In the Northwest Valley region of El Salvador, Thelma and José Gutiérrez have produced another remarkable single origin coffee using black honey processing. The black honey process just indicates this coffee was rotated every 24 hours while drying with the skins removed but fruit pulp (mucilage) still attached to the beans. These 3rd generation farmers are well-known pioneers of this high quality black honey processing.
