ABOUT GUATEMALA FINCA LA PROVIDENCIA
When first brewed, this Guatemalan coffee offers a watermelon-like acidity paired with a very sweet smell. As it cools, this sweetness builds in the cup and becomes reminiscent of a spiced peach cobbler– with a vibrant peach sweetness backed by allspice, cinnamon sticks, and a hint of smokiness. The cup then finishes with lingering notes of walnut and cacao.

Sourced from Finca La Providencia located in the municipality of San Pedro Necta, the name of this coffee (Palhu) is formed from a combination of the family name Palacios and the department of Huehuetenango. La Providencia is owned and operated by Maximiliano Palacios (Max for short), who is a third generation coffee farmer.
The heart of La Providencia is a beautifully maintained mill that begins at a highpoint on the sloped property which is purposefully designed to take full advantage of gravity for the de-pulping process.
PROCESS
Ripe cherries are placed in water and carried through the de-pulping process on a series of intricate canals before reaching the drying patios.
