On the western border of this mountainous Andes region, lush high altitude tropical forests and drier desert-like regions jockey for position before sloping downwards to the east into the world’s largest tropical rainforest...the Amazon.

This specific bourbon lot from Peru by Eiser Carranza is unique due to the 120 hours of fermentation the coffee is subjected to before washing. First, 48 hours are spent in cherry in closed grainpro bags, and then another 72 hours in closed grainpro bags after depulping. These 5 days impart and magnify the elevated acids, florals and fruits in this lot, before being washed and laid out to dry on raised beds.
