CUPPING NOTES FROM OUR HEAD ROASTER

This Peruvian coffee offers notes of pecan and orange blossom when first brewed, with hints of citrus zest on the finish. As it cools, expect a medium body cup with a soft clementine acidity, vanilla bean sweetness, with notes of cherry juice, muddled berries, and honeysuckle. It is excellent as a Chemex or Kalita pour over.

ABOUT PERU INCAHUASI COFFEE

While the coffees produced by Incahuasi Valley in southern Peru have always been stellar, their remoteness and inaccessibility, as well as other political factors, kept them off the specialty market up until recently.

For a long time, a now-defunct cooperative union dominated the region, making it difficult to work within an ideal model of investment and paying smallholder coffee producer's fair wages. When this union dissolved, it became possible to go back to Incahuasi and the larger region of Cusco and reinvest in what has always been known to be a truly unique origin for coffee. Under the excellent leadership of Claudio Ortiz, the coop is thriving.

More and more, Incahuasi is investing profits back into its infrastructure and growth, and their respect for and positivity towards Claudio is unmistakable. While this region is notoriously difficult to traverse, with each trip involving several flights, dozens of hours in the car, and challenging hikes to get into and out of the producing valleys, the quality and the people make it more than worth the effor for importers.. Despite—or perhaps because of—the inherent challenges that come along with sourcing coffee from Incahuasi, no region better represents our mission and values, and we look forward to seeing what the future has in store.
